Penne alla Vodka
Indulge in creamy Penne alla Vodka, where savory pancetta meets a rich, tangy tomato sauce for a delightful meal.
Ingredients
- 400 g penne
- 150 g pancetta in small dice
- 1 small onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 small red chili, finely chopped
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 400 g chopped tomatoes
- 1 dl vodka
- 2 dl whipping cream
- 1 tsp salt
- 1/2 tsp black pepper
How to make it
- Bring a large pot of salted water to a boil and cook the penne until al dente. Before draining, reserve 1 dl of the pasta water.
- Put the pancetta in a cold large pan and turn the heat to medium. Let the fat render slowly, stirring often, until the dice are crisp and lightly browned.
- Add the olive oil and the chopped onion to the pan and cook for 3-4 minutes until the onion is soft and translucent.
- Stir in the garlic, chili and tomato paste, and cook for 1 minute until fragrant and darkened slightly.
- Add the chopped tomatoes and vodka, then simmer for 5 minutes until the sauce looks slightly reduced and the alcohol smell has cooked off.
- Pour in the whipping cream, season with salt and black pepper, and simmer for 2-3 minutes until the sauce turns glossy and pink-orange. Toss in the penne and loosen with a little reserved pasta water until the sauce clings to the pasta.
- Serve immediately in warm shallow bowls, with the penne coated in a smooth, glossy sauce and the crisp pancetta evenly scattered through it.
