Ingredients

  • 700 g mutton
  • 500 g lamb
  • 2 tsp coarse salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 24 wooden skewers

How to make it

  1. Cut the mutton and lamb into small even cubes, about 2 cm wide, and thread them tightly onto the wooden skewers, alternating the two meats until all 24 skewers are filled.
  2. Pat the outside of the skewers dry with paper towels, then brush them lightly with the olive oil and season all sides with the coarse salt and black pepper.
  3. Heat a grill or grill pan over high heat until very hot, then cook the skewers in batches, turning often, until the surfaces are browned and crisp and the meat is cooked through, about 8 to 10 minutes.
  4. Move the cooked skewers to a plate and let them rest for 3 to 4 minutes so the juices settle back into the meat.
  5. Serve the arrosticini hot, piled closely together on a flat plate, with the browned cubes left on the skewers and the seasoning visible on the crust.
