Carne Asada
Savor the bold flavors of juicy carne asada, marinated to perfection and grilled for a mouthwatering feast!
Ingredients
- 800 g flank steak or skirt steak
- juice of 2 limes
- juice of 2 oranges
- 3 garlic cloves, finely chopped
- 1 small bunch coriander, coarsely chopped
- 2 tsp ground cumin
- 2 tsp dried chili
- 2 tsp salt
- 1 tsp black pepper
- 2 tbsp neutral oil
- 12 corn tortillas
- 1 large onion, finely chopped
How to make it
- Mix the lime juice, orange juice, garlic, coriander, cumin, dried chili, salt and black pepper with 1 tbsp oil in a shallow dish. Add the steak and turn it until well coated, then leave it to marinate for 30 minutes.
- Heat the remaining 1 tbsp oil in a pan over medium heat and sweat the onion for 5 to 6 minutes until soft and translucent.
- Remove the steak from the marinade and pat the surface dry with paper towel. Sear it in a very hot pan or on a grill for 3 to 5 minutes per side until darkly browned and still juicy in the center.
- Transfer the steak to a board and rest it for 5 minutes, then slice it thinly across the grain.
- Warm the corn tortillas in a dry pan until soft and lightly toasted at the edges.
- Serve the sliced carne asada on a flat plate with the warm tortillas, the softened onion scattered over the meat, and the chopped coriander spooned on top.
